I doubled the recipe for a buffet dinner. I omitted the eggs and added less rice , just because i was serving devilled eggs and a rice salad alongside. The only problem i had was that i didnt make more, as My sons college friends devoured the whole lot and left me with no leftovers for the next day. A great recipe to entertain a crowd, this is a keeper.

I chose this recipe for PAC 'o6 because it is similar to a recipe that my Mom used to make often when we were growing up and she lost the recipe and we always loved it. I made the recipe as posted except I left out the eggs (personal preference). Thanks for bringing back happy memories with this recipe! I am sure we'll make it often.
