- 2 whole chicken breasts, cooked and chopped
- 1 jar pimiento
- 1 cup chopped celery
- 1⁄2 cup chopped onion
- 1⁄2 cup almonds
- 1⁄2 cup chopped bell pepper
- 1⁄2 cup mayonnaise or 1/2 cup salad dressing
- 1 can cream of chicken soup
- 1⁄4 cup breadcrumbs
- 1⁄4 cup parmesan cheese
- 2 tablespoons butter
directions
- Combine first eight ingredients in oven proof pan.
- Mix bread crumbs, parmesan and butter and sprinkle on top.
- Bake uncovered for 35 minutes at 350 degrees.

Wonderful Casserole! I used less bell pepper (personal preference), increased the chopped celery and lightly sauteed both with the onion in some oleo. I topped the casserole with a 1/4 cup of shredded, sharp cheddar cheese and then added the crumbs, parmesan and butter mixture. Thanks, Kristal, for your great recipe!
