I made this for lunch today and it was great! I left out the celery because the hubs wanted me to, but otherwise I made it as directed. I think velveeta is key here, it wouldn't have been nearly as creamy and smooth with another kind of shredded cheese, in my opinion. Oh, and I had a white sub sandwich roll that I got day old at a sandwich shop. I cut it up into four sandwiches and filled them with the cold mixture. I wrapped each one in aluminum foil and baked as directed. I will definitely be making this again...and again...and again. It's a nice, simple, light meal. Made for PAC 2008!
