The person I got this recipe from used this title, but it is really a casserole. I like the way all of the different tastes interact together.

I have used this recipe for years. I love it but have never put lemon or eggs in it. We microwave it for 15 minutes and crush potato chips on the top.

Directions

  1. Cook rice according to package directions.
  2. Stir in remaining ingredients and mix well.
  3. Spoon into a 2 1/2 quart casserole dish.
  4. Cover and bake at 400° for 20-30 minutes, until heated well through into center of casserole.
