Hot Chicken Casserole

"This recipe was on one of my recipe disks. I tried it and it was great, except if you're going to use potato chips on the top instead of the Chow Mien Noodles, I'd NOT use the 1 tsp of salt in the recipe. Try it and let me know what ya'll think."

  • 2 (10 1/2 ounce) cans cream of chicken soup
  • 1 12 cups grated cheddar cheese
  • 1 cup mayonnaise
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups bite-sized pieces cooked chicken
  • 1 cup slivered almonds
  • 2 cups celery, chopped
  • 1 (8 ounce) can water chestnuts, drained
  • 2 cups potato chips or 2 cups chow mein noodles (More Or Less To Preference)

directions

  • In Large bowl, combine first 4 ingredients.
  • Stir until smooth, then mix in the remainder of the ingredients.
  • Put mixture into a baking dish.
  • Top with a thick layer of either crumbled Potato Chips or Chow Mien Noodles.
  • Bake at 350³F for 45 minutes or until hot and bubbly.

I love being at home with my children..love paying for ALL the stuff my 2nd grader brings home...soccer fees, and basketball fees, and book orders...I love cartin' my kindergartner around, and then coming home and cuddlin' with my little girl, and shopping for her favorite thing...shoes. My husband and I are as tight as 2 people can be, and I hate it when he leaves for work and can't wait until the clock strikes 4:30 because I know that means he's on his way home. Life is good. I couldn't ask for more.</p>
