"Sorry about the name of the recipe but this is how it was received from a member of my husband's family. This is basically a sausage meatloaf with saurkraut. If you like saurkraut this dish is a must for any cook. Traditionally served on the first day of the year."

  • Ingredients

  • 1 lb Bob Evans sausage (mild)
  • 1 egg
  • 2 (16 ounce) cans sauerkraut (to taste)
  • 34 cup cooked rice
  • 10 -12 crackers, crushed
  • 1 dash salt and pepper (to taste)

directions

  • Preheat oven to 325 degrees.
  • Mix all ingredients, and shape into a loaf.
  • Surround with saurkraut with juices.
  • Bake for 2 hours.
  • Serve with mashed potatoes.
