Honeyed Carrots and Zucchini Julienne

  • Slice carrot and zucchini into long thin strips.
  • Heat butter in a pan and saute the vegetables until soft being careful not to burn.
  • Add honey and pepper, gently heat through and serve.

  1. I sauted the carrots about 3 minutes, then added the zucchinni. The honey and black pepper gives a great flavor. A very appealing dish. I sprinkled sliced almonds on top. Great dish, thanks Susie!!
     
  2. I let the carrots simmer in a 1/4 cup chicken stock for a couple of minutes before adding the zucchini and also halved the honey amount. Really tasty vegetable dish. Thanks for posting. =)
     
  3. This is a wonderful quick and easy recipe. I sauteed the carrots about 5 minutes then added the zucchini mainly because I like my carrots more tender than crisp. I thought I was going to want to add salt but after tasting, felt like it had a great flavor without salt (which is very unusual for me). This also had great eye appeal--bright colors. Thanks for a great recipe :D

I live in Australia but I am Spanish. I am a dressmaker by trade but find myself enjoying cooking more these days.
