I found this recipe in an old cookbook and thought it sounded interesting. I can't wait to try it!

Directions

  1. Line salad plates with lettuce leaves or salad greens of your choice.
  2. In a bowl, combine the melon, celery, red peppers, walnuts and parsley.
  3. Put equal amounts on each salad plate.
  4. For the dressing, combine the lime juice, vinegar, oil, honey.
  5. Mix well.
  6. Salt and pepper to taste.
  7. Drizzle over the salad right before serving.

This is really delicious without the red pepper out of preference. I also think it would be wonderful without the greens for which I used baby romaine and it was good that way. I used apple cider vinegar with the mother in it, unrefined sunflower oil, freshly squeezed lime juice, creamed honey, sea salt, freshly ground black pepper and the rest. I may make this again without the greens!!

Wonderful. I chose not to put the melon/veggies mixture on salad greens. Loved it on its own in a small bowl. Excellent combination and the dressing is neither too tart nor too sweet. Thanks for posting!

A nice mix of colours, textures and tastes. My kids are getting bored with salad, so great to have something different. I played with the dressing a bit . . . cut back to 1/4 c. oil and a little less honey, but left the rest the same. Used apple cider vinegar. Thanks for sharing this.
