Crepes are surprisingly simple to make. These are great filled with blueberry sauce and vanilla yogurt.

  1. Combine all ingredients except the butter in a blender and blend until smooth.
  2. Melt butter in an 8-inch non-stick skillet.
  3. Spoon 3-4 tablespoons of the batter into the skillet, quickly rotating and tilting it to cover evenly with batter.
  4. Cook until edges start to brown.
  5. Flip crepe and cook until lightly browned.
  6. Remove from skillet.
  7. Repeat with remaining batter.
  8. Fill with desired filling.

Very good crepes. I love the blend of whole wheat and all purpose flour, its perfect. Very easy to make. I used 1/4 cup per crepe. Served with whipped butter and fresh fruit. I will be making these again and often. Thanks for posting a great recipe.
