  • Mix together the flour, powder, soda and salt.
  • Add to the dry ingredients, the egg, honey, oil, milk, vanilla and rice all at once.
  • Stir just until blended.
  • Spoon into muffin tin.
  • Bake at 400 for 15 minutes.

  2. These are really great. Nice light muffins with just a bit of chewiness from the rice. I used a blend of brown and wild rices. I will be making these again.
     
  3. These were really good! I put a little grated nutmeg in mine to really give it that rice pudding taste. So fast to make - Delicious! I used to have a recipe for rice muffins and lost it. You are the only one on line that has a recipe for them. So thank you!
     
  4. Great way to use up some leftover rice! Low fat and tasty. Reminded me a bit of rice pudding. Some cinnamon sugar on top would be a nice variation. Used jasmine rice cooked without salt and still found the muffins too salty. Would reduce or omit the salt next time. Will make again. Thanks for sharing the recipe!
