A great way to use leftover rice. A nicely textured, slightly sweet muffin.

  1. Mix together the flour, powder, soda and salt.
  2. Add to the dry ingredients, the egg, honey, oil, milk, vanilla and rice all at once.
  3. Stir just until blended.
  4. Spoon into muffin tin.
  5. Bake at 400 for 15 minutes.

Awesome!! Tastes bit like a rice pudding muffin! I used pure maple syrup instead of honey, added some shredded apple, raisins and cinnamon. Delish!!

Great way to use up some leftover rice! Low fat and tasty. Reminded me a bit of rice pudding. Some cinnamon sugar on top would be a nice variation. Used jasmine rice cooked without salt and still found the muffins too salty. Would reduce or omit the salt next time. Will make again. Thanks for sharing the recipe!

These are really great. Nice light muffins with just a bit of chewiness from the rice. I used a blend of brown and wild rices. I will be making these again.
