Honey Peanut Butter Cookies

ingredients
- 1 1⁄2 cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon baking powder
- 1⁄8 teaspoon salt
- 1⁄2 cup unsalted butter
- 2⁄3 cup sugar
- 2 tablespoons peanut butter
- 1⁄3 cup honey
- 1 cup roasted unsalted peanuts, finely chopped

Topping
- 3⁄4 cup confectioners' sugar
- 2 tablespoons butter, softened
- 1 tablespoon water
directions
- Preheat your oven to 350°.
- Coat a baking sheet with melted butter or oil.
- Sift the flour into a large bowl and stir in the oats, the baking powder, and the salt In a pan, over medium heat, mix together the butter, sugar, peanut butter, and honey until melted.
- Add the contents of the pan to the flour mixture and stir to combine.
- Form teaspoonfuls of mixture into balls and place on baking sheets, allowing room for spreading. Flatten or "Squish" the dough balls lightly with a fork.
- Bake for ten minutes or until golden in color.
- Cool on baking sheet before removing from sheet.
- ---Topping---.
- Stir together the powdered sugar, butter, and water until smooth.
- Dip tops of cookies into the topping.
- Allow topping to set.

I'm one of those people that could eat a whole jar of Skippy's Honey Peanutbutter in one sitting, so this cookie was perfect for me. Even my un-American kids, who abhor peanutbutter (more for me) enjoyed these cookies. The topping may be optional, but don't leave it out. Dornette #4 helped me make these cookies, and her favorite part was dipping the cookies into the topping. Actually, her favorite part was dipping her fingers into the topping... Good one, Rick!

I'm not much of a cook, but I have a long history of avidly adoring the end results of cooking. Before retirement I worked as a crime scene investigator (No, I don't know as much as the stars of CSI apparently do and Yes, I am just as good looking), which means liver is not at the top of my list for dinner. My favorite son, who is an excellent cook, alerted me to this site and I'm finding it fascinating.
I enjoy languages. Can't figure out why everyone doesn't learn Esperanto. :) My greatest passion is my 17 year old wife. Well, she was 17 when I met her and 37 years later she still looks the same as far as I am concerned so she must be still 17, right? Next in order are our kids: Two biological, 1 adopted, 4 foster, and one exchange student who either belongs to us or to some people in Japan (personally I think she belongs to us!!) Next passion are the 15 (to date) grandkids.
Peeves? Onions!! I loathe, hate, disdain, detest, abhor, and simply dislike 'em.
