Honey Mint Spinach Salad

  • Drain pineapple, reserving 1/2 cup juice for dressing.
  • Toss together pineapple, oranges, spinach, radishes, and cucumber.
  • For dressing, combine reserved pineapple juice with remaining ingredients in a screw top jar.
  • Shake well and pour over salad. Toss.
