Honey Mint Spinach Salad

- 20 ounces pineapple chunks, in juice
- 11 ounces mandarin oranges, drained
- 2 quarts spinach leaves
- 1 bunch radish, sliced
- 1 cup cucumber, sliced
- 3 tablespoons vegetable oil
- 2 tablespoons lemon juice (fresh)
- 1 tablespoon honey
- 2 teaspoons lemon peel, grated
- 1⁄2 teaspoon dried mint, crumbled
directions
- Drain pineapple, reserving 1/2 cup juice for dressing.
- Toss together pineapple, oranges, spinach, radishes, and cucumber.
- For dressing, combine reserved pineapple juice with remaining ingredients in a screw top jar.
- Shake well and pour over salad. Toss.
