This was a very lovely recipe. I did change it a little. I used a whole fresh pineapple and for the juice I used the pear juice the mandarin oranges were packed in. I also grated a whole lime zest. The only suggestion I would make is to make it right before you serve it as I made in the the morning for a picnic and it did not present well. It looked beautiful in the morning. It was fresh tasting and would be great with a jerk meat of some kind. Thanks for sharing.

Easy, easy and we loved the lime flavor in the dressing. It is quite the colorful salad and looks good with any dish.

I found this exact same recipe on label from a can of Dole fruit. I usually leave out the banana though because if you don't eat this right after you make it they will get very soft quickly. I just wanted to add that the only variation is that it calls for 1/4 Tsp. Lime Zest. Not lemon. But it's great either way. I just thought I'd add that. Thank's!!
