This works well as a quick marinade and basting sauce. I especially like it on chicken - great to cook ahead and bring as sandwiches for a picnic.
- Crush the rosemary- either a mortar and pestle or a coffee grinder work well.
- Combine all ingredients.
I've very often made a similar marinade/sauce and yes, it so quick and delicious. I brush it on a chicken and also put some in the cavity, before roasting in the oven. Suggestions: if you use 2 t. or 1 Tbsp table mustard and whisk the sauce, it will emulsify and improve in taste. I'd also add salt to the recipe. I prefer using fresh rosemary, in which case I'd use quite a lot more -- a handful! The combination of honey and lemon is a winner, also with fish but I usually mix the honey and lemon 50-50.
