I love this dish! The combination of lemon and honey is delicious, and the ginger gives it a nice little flavour kick. I serve this with my Cashew Raisin Rice Pilaf and fresh steamed broccoli.
- 2 1⁄2-3 lbs cut up chicken pieces
- 2 tablespoons butter
- 1⁄2 cup honey
- 1⁄2 cup water
- 1⁄4 cup butter, melted
- 1⁄4 cup lemon juice
- 1 teaspoon ground ginger
- In a large frying pan melt the 2 tablespoons butter and brown chicken pieces on all sides.
- Combine remaining ingredients and pour over chicken.
- Cover and cook over low heat, basting occasionally, for 35 to 40 minutes or until chicken is tender.
