This is a quick and easy chicken recipe, great for a fast weekday meal, serve with rice.

  1. Set oven to 350 degrees.
  2. Grease a 13 x 9-in baking pan.
  3. Sprinkle chicken with seasonings.
  4. Combine mustard, honey and apricot preserves.
  5. Rub over chicken pieces.
  6. Bake, uncovered for 40-45 mins, or until chicken is done.

I gave this recipe 3 stars. My future hubby and I liked this chicken. My 5 yr old newphew did not. The only changes I made to this recipe is that I used chicken leg quarters, I cut back on the paprika by using 1/2 tsp, imitation honey, sugar free apricot preserves. Over all this was a good recipe that we will have again! Thanks for posting a good recipe. Christine (internetnut)

Why has this recipe not been reviewed before now?? This combo of tastes is right up my alley. Kittencal, I added a little leftover dry wine to the dish I baked the chicken in, beforehand, because DH wanted rice, and I wanted enough sauce. I also used 2 teaspoon of a very mild, spicy Malay curry. Otherwise, no changes. Lovely taste!! This one warning: cover the chicken with tented foil for about 3/4 of the baking time, because the sauce can burn easily. Then take it off, and let chicken brown. MADE IN MEMORY OF YOUR HUSBAND.
