I got this recipe off the back of a Publix package. This recipe is for microwaved carrots. If anyone can work out the oven directions please send them to me.
- 16 ounces baby carrots
- 1 tablespoon butter (or margarine)
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 2 teaspoons cornstarch
- 1⁄4 teaspoon salt
- Combine ingredients in a microwave safe dish.
- Cover and cook on HIGH 10-12 minutes, stirring once, until tender.
I scaled this back for 2 of us and used 5 1/2 ounces of baby carrots and the DM really enjoyed but not me so much but then I faulted as I don't do much microwave cooking (trying to incorporate more) I used the full time specified, it think I should have used a lot less so they were rather shrivelled and still tender. I mixed all the ingredients except the carrots to form a paste which I then spread over the carrots in the microwave dish, I have a 900W oven but will make again and cut back the timing and hope we get a better result and for dietary reasons will use a sugar free maple syrup.
