Honey, Date and Apricot Slice

"A yummy, crunchy slice with (surprisingly) as much flavour as traditional slices high in butter and sugar. This was originally a recipe in Too Good To Be True but I've made changes to remove all butter and further reduce the amount of sugar used. Also low GI."

  • 1 egg white
  • 1 tablespoon brown sugar
  • 1 12 tablespoons apple juice concentrate (this can be found in health food stores)
  • 2 tablespoons grapeseed oil
  • 3 tablespoons honey
  • 1 tablespoon shredded coconut
  • 12 teaspoon cinnamon
  • 34 cup chopped dried apricot, and
  • dates (It's just a mixture of the two, so you can have a larger portion of apricots to dates, or vice versa)
  • 13 cup rolled oats
  • 3 cups Special K cereal (you could also use Sultana Bran for something different, or just use plain rice flakes)
  • 34 cup whole meal flour
  • 1 teaspoon baking powder

  • In a medium mixing bowl beat the egg white, apple juice concentrate and sugar using an electric mixer. Add the honey and oil to the mixture and beat for 2 minutes.
  • With a wooden spoon stir in the coconut, cinnamon, apricots and dates, oats, rice flakes, flour and baking powder. Mix well.
  • Pour mixture into a lined slice tin and press down firmly with a metal spoon dipped in hot water.
  • Bake in a moderate to hot oven for 20-25 minutes or until golden and brown. Allow to cool before cutting.

Ofcourse this photo isn't actually me, but it's a pic i came across one day and just loved it! Moving on... I'm an Aussie girl and i absolutely love living here (in the food sense lol!) because it's so easy to access foods from all sorts of cultures and it's all so easily accessible! I work in a cafe which is quite fitting, and it's great because i'm around food all the time (and it's free...!). I do a heck of a lot of dancing and am about to enter year 12 (argh, exams and hard work!) so i do a lot of cooking as a way of relaxing. Also a bit of a healthy nut, and i don't tolerate dairy too well, so i'm always looking out for ways to make a recipe healthier and how to make it without dairy! I still enjoy cooking with everything (even if i don't eat it!) and most of the time it's passed onto the rest of the family (who are definitely happy with me doing the cooking fairly regularly!) <img src="http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/adoptedspring08.jpg" border="0" alt="Photobucket">
