These coockies are great just on their own or filled with jam. I tend to use apricot or peach jam wich goes well with these light tasting cookies.

  1. Preheat oven to 350F
  2. Cream butter and sugar.
  3. Beat in honey, egg and vanilla.
  4. Mix flour with baking soda and salt; blend inches
  5. Chill about 30 minutes.
  6. Shape into small balls.
  7. Place on a lightly greased baking sheet.
  8. Flatten with floured fork or the bottom of a glass.
  9. Bake 8 to 10 minutes.
  10. When cool, put together in pairs filled with honey or jam.
  11. Store in a tightly covered container.
