There are several honey butters already in Zaar, but mine is without added sugar and is more honey than butter. My family loves this.

  1. Cream butter until light and fluffy; gradually add honey, beating well.
  2. Beat in lemon rind.
  3. Chill butter mixture several hours or overnight.
  4. Serve with muffins or toast.

This was pretty good. I defintely used more lemon than called for. But, I liked the flavor even though DH didn't care for it that much.

I made this to go with some frozen yeast rolls for a luncheon that I catered. The ladies raved over it! I didn't use as much honey as called for, two heaping tablespoons, and it was just sweet enough. The lemon did give it a little something extra! It was a hit! Thanks for posting!

I made a big pot of bean soup and served it with corn bread. We had the neighbors over to share the soup and I wanted to make a special butter for the corn bread. And I DID IT!!! (With your help). This was delicious. I doubled the recipe -- but left the honey about the same (2/3 c). It was just right. The next morning we made Belgian Waffles and used the left over butter on them - outstanding.
