Little crunchy-chewy whole grain granola bites to take on the go! -modified from Whole Grain Gourmet website recipe. Make lots and freeze to have on hand. Egg and nuts add protein.

  1. Preheat oven to 325 and take egg and butter out from fridge.
  2. Combine oats, flour, flaxseed, nuts, and dates in a large bowl.
  3. Beat egg and add. Mix thoroughly.
  4. Melt butter, sugar, and honey in saucepan over low heat. Allow to cool a bit, then add slowly to ingredients in other bowl while mixing thoroughly.
  5. Fill mini muffin tins, smashing down just below surface level with back of spoon so they're tightly compacted.
  6. Bake 9-12 min until browned and chewy.
