Honey Baked Chicken

ingredients
- 1 clove garlic, minced
- 4 tablespoons melted butter
- 1 1⁄2 tablespoons soy sauce
- 1⁄4 cup honey
- 1⁄4 cup fresh lemon juice
- 3 lbs chicken pieces
directions
- Preheat oven to 400F.
- Place all ingredients, except chicken, in a small saucepan, and cook, over low heat, for 3 minutes, to melt honey.
- Whisk a couple of times.
- Place chicken, skin side down, in a shallow baking pan.
- Season with salt and pepper.
- Bake about 30 minutes.
- Turn, pour on sauce, season with more salt and pepper.
- Bake about 20 minutes more longer, until juices run clear when chicken is pierced, basting once or twice.

This is very nicely flavoured chicken. The sauce is a bit thin and didn't stick to the chicken as much as some do. I did find that basting it as I took it out of the oven and letting it rest for several minutes did allow the sauce to get a bit thicker and stickier. Thanks Ev, for a very good dinner!

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
