The authentic lebanese chickpea hommos (humus). This is the recipe provided by the Lebanese Gastronomy Association so I hope nobody will argue about the autenticity :)

  1. Soak the chickpeas for about 24hours in about 1.5liters water.
  2. Rinse the chickpeas and cook them in boiled water with the baking soda. This will take about one hour and a half.
  3. Rinse the cooked chickpeas.
  4. Mix the garlic with the chickpeas in a blender. You must obtain a pretty thick paste.
  5. Add the sesame oil and then the sesame oile.
  6. When served, add a little olive oil on top.
