Hominy Con Chile (Mexican

Use this recipe in place of potatoes or rice. This is a recipe I found in my "Low Fat Mexican Recipes" cookbook. My very favorite for lowfat Mexican cooking.

• Cook Time: 45 mins

Ingredients:

Servings: 8

• 2 (15 ounce) cans hominy
• 7 ounces green chilies , diced
• 10 ½ ounces cream of mushroom soup , low fat
• 1 cup sour cream , fat free
• 1⁄8; teaspoon cumin
• ¼ teaspoon pepper
• 1 tablespoon cilantro , dried
• 1 cup cheddar cheese , low fat, shredded

Directions:

1. Preheat oven to 350 degrees.
2. Pour hominy into a colander, rinsewell with water and allow to drain.
3. In a large bowl, combine hominy, chiles, soup sour cream, seasonings and 1/2 cup cheese.
4. Mix well and pour into a nonstick baking dish.
5. Sprinkle with remaining cheese on top.
6. Bake 45 minutes.
