Had a half of can of white hominy to use up. I put some shredded potatoes on the bottom of the plate and topped it with this. I added some shredded cheese, avocado, and salsa. Scooped up with a tortilla. I would make this again.
I made this for a family breakfast potluck and got compliments. I forgot the green pepper and added cumin, garlic, and pepper. It definitely needed the spices, but was very good and super easy to make.
I started making this back in the 60's, sans the green pepper, and it's been a favorite ever since. Hominy is a staple in my pantry just for this recipe which I have often. It's a fast and very easy meal anytime...breakfast lunch or dinner. Sometimes I just use bacon bits and a little bacon fat (which I keep in my refrigerator). Butter is good too. So glad to see it posted.
