ingredients
- 1 1⁄2 lbs lean ground beef
- 1⁄2 cup tomato ketchup
- 1⁄3 cup tomato juice
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1⁄8 teaspoon red pepper
- 2 eggs, beaten
- 3⁄4 cup fresh breadcrumb
- 1⁄4 cup onion, chopped
- 2 teaspoons prepared mustard

Topping
- 1⁄4 cup tomato ketchup
- 1⁄2 teaspoon prepared mustard
- 2 teaspoons brown sugar
- 2 teaspoons fresh herbs, for garnish
directions
- In large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions, and mustard. Mix until thoroughly blended.
- Add ground beef. Mix gently but thoroughly.
- Line a 9" x 5" loaf pan with foil (or spray with Pam). Press in the beef mixture.
- In a separate bowl, combine the topping ingredients, mixing well.
- Spread topping over the meat loaf.
- Bake at 400 for 35 to 45 minutes or until done.
- Drain off fat. Rest meat loaf 5 minutes before serving.
- Garnish.with fresh herbs, if desired.

I came across this recipe while my wife was sleeping (I couldn't find her recipe). We have to tell you it is delicious! I've made it twice now and the second time I doubled the recipe since it went so quick. The brown sugar in the topping adss a nice sweet ending to the flavor of the meat loaf. This is a for sure keeper!
