    I found this recipe over twenty years ago. The whole family loves it. My brother-in-law nevers eats a second helping of anything (he is very weight conscious), except this meat loaf. When I make it I always double the recipe.

    Serves: 5-6

    Directions:

      In large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions, and mustard. Mix until thoroughly blended.

      Add ground beef. Mix gently but thoroughly.

      Line a 9" x 5" loaf pan with foil (or spray with Pam). Press in the beef mixture.

      In a separate bowl, combine the topping ingredients, mixing well.

      Spread topping over the meat loaf.

      Bake at 400 for 35 to 45 minutes or until done.

      Drain off fat. Rest meat loaf 5 minutes before serving.

      Garnish.with fresh herbs, if desired.
