Homey Meat Loaf

"I found this recipe over twenty years ago. The whole family loves it. My brother-in-law nevers eats a second helping of anything (he is very weight conscious), except this meat loaf. When I make it I always double the recipe."

  • In large bowl, combine ketchup, tomato juice, salt, black and red peppers, eggs, bread crumbs, onions, and mustard. Mix until thoroughly blended.
  • Add ground beef. Mix gently but thoroughly.
  • Line a 9" x 5" loaf pan with foil (or spray with Pam). Press in the beef mixture.
  • In a separate bowl, combine the topping ingredients, mixing well.
  • Spread topping over the meat loaf.
  • Bake at 400 for 35 to 45 minutes or until done.
  • Drain off fat. Rest meat loaf 5 minutes before serving.
  • Garnish.with fresh herbs, if desired.

  1. This meat loaf is fabulous! I added 1/4 cup bell peppers chopped and used crushed saltine cracker in place of breadcrumbs. Wonderful recipe!
     
  2. Made this for dinner tonite. It was really good. I did not have tomato juice so I used tomato sauce in it's place. It worked just fine. I will definitely be making this my "regular" meatloaf as my hubby had two helpings, and so did I ;)

  4. I came across this recipe while my wife was sleeping (I couldn't find her recipe). We have to tell you it is delicious! I've made it twice now and the second time I doubled the recipe since it went so quick. The brown sugar in the topping adss a nice sweet ending to the flavor of the meat loaf. This is a for sure keeper!
