This is a recipe that I learned from my mom. She was Vietnamese, but since her husband (my dad) was an American, she tried to make American dishes as well. Through the years, she would change & improvise. I could never get an exact recipe from her on this. On one of her last trips to NC to visit us, she made this & I made sure to watch very closely. This is a great recipe with a nice green salad & garlic bread!!

I enjoy making homemade spaghetti sauce since it tastes so much better then store bought and this was very good sauce. Used ground round and ziti pasta for a change of pace. Eyeballed a couple sprinkles of brown sugar because I didnt want a overly sweet sauce. I had petite diced tomatoes on hand so I substituted one can for the stewed tomatoes. For the water and chicken bouillon cubes I used one cup of chicken broth. Want to give this a try with italian sausage some time soon. Made and reviewed for PAC Spring 2013.
- 1 (12 ounce) package pasta (Whichever you like!)
- 3 tablespoons olive oil
- 1 lb ground beef
- 3 garlic cloves, minced
- 1 large onion, sliced
- 1 green pepper, diced
- 1 (14 ounce) can diced tomatoes
- 1 (14 ounce) can stewed tomatoes
- 1 (4 ounce) can tomato paste
- 1 cup water
- 2 chicken bouillon cubes
- 1⁄8-1⁄4 cup brown sugar (1/4 c. makes for a sweeter sauce)
- 1⁄2 tablespoon oregano
- 1⁄2 tablespoon basil
- 1⁄4 cup freshly chopped parsley
- 1⁄4 cup grated parmesan cheese

- In a large pot boiling water, add a pinch of salt for flavor & add pasta. Cook according to package directions. Drain & set aside.
- While pasta is cooking, in a large skillet add oil. Once oil is hot, add ground beef, onions, garlic & green peppers. Cook until ground beef & cooked thoroughly & onions are translucent. Drain.
- Add ground beef mixture back into skillet & add tomatoes, tomato paste, water, chicken bouillon cubes, oregano, basil & brown sugar. Stir. Bring to a boil, stirring occasionally. Reduce to med. heat to bring the sauce to a simmer; cover with a lid & stir occasionally for about 10 minutes.
- On a large platter, place pasta & then top with spaghetti sauce. Top with grated parmesan cheese & parsley. Serve with a salad & garlic bread.
