- 2 (28 ounce) cans diced tomatoes
- 1 medium chopped onion
- 4 garlic cloves, chopped
- 2 jalapenos, 1 with seeds, 1 without seeds
- 1⁄4 cup fresh cilantro, chopped
- salt and pepper
- cayenne pepper (optional)
directions
- Drain one can of tomatoes and reserve juice.
- Add drained tomatoes, undrained tomatoes, onion, garlic and jalepenos to a food processor. Pulse until completely processed. If salsa is a little dry, add some of the reserved tomato liquid to desired consistency.
- Adjust seasoning with salt, pepper and cayenne. Finish by adding in chopped cilantro.
- Place in refrigerator for 1 hour. Enjoy with your favorite chips.
