Homemade Pasta

"I saw this on a cooking show on TV and it's now my favourite recipe for making noodles. The food processor does all the hard work of kneading the dough for you. I usually dry my strips from the pasta machine a little before cutting them into noodles. They seem to separate better that way. I then put meal size quantities in zip lock bags and freeze This saves hanging them up to dry."

  • Add all ingredients to a food processor.
  • Process until mixture starts to form a ball. You should knead the dough for at about ten minutes until it bouncers back when pressed down with your finger.
  • You may want to start with a little less water depending on the size of your eggs and moistness of your flour.
  • Wrap ball in plastic wrap and let rest for about an hour.
  • Then make your pasta using your pasta machine or rolling out. Enjoy -- .

  1. How far in advance can you make the dough? Can it be made the day before?
     
  2. I'm confuse about the ratio of flour to eggs. I watched another video on homemade pasta and it was a 2:1 ratio of flour to eggs. This recipe is significantly different. Seems to me that this disparity would have a huge impact on the final product. Is it because of LARGE eggs vs small eggs or loosely sifted flour vs hard-packed flour or what ?

  1. sad panda me has no stand mixer or pasta machine so we did it all by hand. wow are my wrists sore! it's great pasta but even trading off with my prep cook this was a LOT of work. luckily i doubled it and froze half. i do really want to make this again, but not without mechanical assistance. i have a new respect for tiny old Italian women.
     
  2. I made homemade pasta for the first time using this recipe because I liked how easy this recipe was. The noodles had a great taste and was great with alfredo sauce. The only change I made was that I added a little garlic salt to the recipe. These noodles were light and very tasty! The only thing that I did wrong, was after running the dough through the pasta maker, I laid the noodles out on my countertop and they stuck to it. :^( Next time I make these noodles, I'll make sure they are put on a floured surface.   3. It was my first time making pasta and it worked out wonderfully! I used an extra tbsp of water as my dough was just too dry to bind, and added a little bit of salt. I put the pasta straight into boiling water because I made thin noodles that were hard to keep from sticking together. Thanks for posting Bob!
     
  4. If you do made these, I suggest you do use a pasta machine. I own one, but decided to try it the old fashioned way...rolling it out by hand and cutting it. The pasta was way too thick, and took forever to boil. Live and learn.
     
  5. Works great in the food processor. I added extra gluten flour as I usually us semolina, but had run out. I also added a variety of herbs and spices. It rolled out quite nicely in my Ankarsrum pasta roller. I cut it by hand with my meat cleaver as we prefer wider slices. To prevent sticking I have always used cornstarch that I put in an empty spice jar and then sprinkle it on. It works like a charm, no additional drying needed, and it freezes and defrosts well without any sticking.

  2. It was my first attempt and honestly I'm really happy with the results! I used white whole wheat flour instead of AP and only needed around 1.5 tbsp of water. As my food processor wasn't big enough, I had to incorporate the ingredients and then kneaded the dough for around 5 mins until smooth and elastic. Very simple and very yummy!! Thank you!
