  • Place the egg, lime juice, salt and garlic into the bowl of a food processor. Pulse to mix.
  • With machine running, slowly pour in oil in a thin, steady stream.
  • If this mayonnaise is too thick, you can thin it out with a little more lime juice.

  1. I made this this morning and used some of it to make a potato salad and oh my! did it add something special. I most always use garlic in my potato salads but the lime addition was excellent. No trouble at all to make with the food processor. I have leftover chicken from tonights dinner and I'm looking forward to making a sandwich with if and this marvelous mayo.
     
  2. Oh my! This is a beautiful mayo! The lime just gives it a little tang, and I gave it an extra squeeze on purpose.I used this to make a tuna sandwich, I put it on some sliced beefsteak tomatoes,and on a club sandwich for my hubby. Thumbs up all the way! Thanks Pat for sharing and for another keeper, this is so easy, and so good! Made for Go For The Green event at the forums at KK.
