    Chicken soup is not only good for a cold, it may help prevent one! You can garnish with thin slices of ginger, garlic, lemon, or jalapeno pepper for extra immune support. This is from Delicious Living magazine. You can make the homemade stock or use chicken broth instead. Cook time does not include making stock.

    Directions:

      To make stock, rinse chicken parts in cold water.

      Put all stock ingredients, except salt, in a large stockpot.

      Bring to a boil, reduce heat.

      Simmer 2 hours, skimming froth from surface occasionally.

      Remove from heat.

      Remove chicken pieces; discard skin.

      Dice and save meat for soup.

      Strain broth and discard remaining solids.

      Season with salt to taste.

      If making ahead, refrigerate; remove any solidified fat before using.

      To make soup, warm 1 tbls.

      olive oil in a large pot over medium heat.

      Add garlic, onion, carrots, and celery.

      Saute 3-5 minutes.

      Add 6 cups chicken stock and stir.

      Bring to a boil, reduce heat.

      Cover and simmer for 30-40 minutes or until vegetables are soft.

      Add cooked chicken and cooked noodles.

      Simmer for 5 minutes.

      Remove from heat.

      Adjust seasoning with salt and pepper.

      Combine all mojo ingredients in a small bowl and stir until blended.

      Drizzle over hot soup.

      I adore this soup!! It is the best chicken noodle (rice pasta macaroni) soup I have ever made. I did tone down the cayenne (used about 1/4 of the amount called for) and loved the mojo mixture drizzled in. The ginger definitely does something for the soup. I kept adding more of the spice mixture until it was quite spicy for my taste. DD (toddler) enjoyed the soup as well with a little mojo too. I did the whole deal including making the stock out of white chicken parts like wings and a whole carcass with some meat still on it, necks etc. Just used the white meat in the soup. I changed nothing else and would make this again!!!

      I cant believe that I haven't done a review for this recipe yet! I tried it months ago, and ever since, it is our families chicken noodle soup recipe! We use the mojo sauce on everything! If you like the burn of wasabi, you'll love the mojo too! Thanks for a fantastic (and healthy) recipe!

      WOW!!!!I think I just made the best chicken soup ever! I made this for a friend who is sick and believe it is exactly what the doctor ordered. I used a good store bought chicken stock, marinated garlic chicken, added some fresh thyme and parsley. The mojo makes it however, allowing you to spice it as you please. Thanks for the recipe!
