Rub
- 4.92 ml coriander
- 9.85 ml paprika
- 14.79 ml new mexico chili powder
- 9.85 ml brown sugar
- 4.92 ml kosher salt
- 7.39 ml fresh ground black pepper
- 9.85 ml garlic powder
- 2 dozen chicken wings

Basting Sauce
- 236.59 ml butter
- 3 clove garlic, minced
- 44.37 ml Tabasco sauce
- 44.37 ml fresh lemon juice
- 2.46 ml dried basil
- 2.46 ml oregano
- 2.46 ml thyme
directions
- Combine the Rub ingredients (1st 7 ingredients) in a bowl.
- Rinse the chicken wings in cold water and cut in half at the joint, discarding the tips of the wings.
- Rub the dry spice mixture well into the wings, cover and refrigerate.
- Preheat the oven to 400 degrees F.
- Melt the butter in a small saucepan.
- Add the garlic, Tabasco, lemon juice and dried herbs; simmer for 15 minutes.
- Arrange the chicken on a roasting pan or baking dish and bake 15 minutes, turning once.
- Remove the wings from the oven and baste generously with the sauce.
- Return to the oven, reduce the heat to 350 F and continue cooking about 20 minutes, or until crisp and brown.
- *Ifyou want to reduce the fat, use butter buds and/or chicken breast strips.

Leta, this was delicious! I put the rub on the chicken and let it sit overnight. It came out looking so good, the meat fell off the bone. Now I did have to cook it about 15 mins. longer than called for, but my wings were fairly large. I use margarine instead of butter. For the Tabasco I used chipotle hot sauce, Yum!Thanks for a great tasting recipe!

Delicious! I also put the rub on the chicken and let it sit in the refrigerator for several hours (about 4 hours). I used chicken drumlets and cooked the chicken for a total of about 45 minutes (but we like our chicken wings very well done). My dh and ds gobbled these up -- spiced just right for us. Next time I may cut down the margarine (I used margarine instead of butter also) to 1/2 cup.
