- 5 -6 medium potatoes
- to taste vegetable oil
- to taste salt and pepper (to flavor)
- Boil potatoes with jackets on until the fork goes in fairly easily.
- Peel potatoes after they cool.
- Put small amount of oil in skillet. Slice and fry until brown.
As simple as this is, it's my favorite way to prepare home fries...especially from leftover potatoes. Skins on, the way to go, cooking as long as possible until crispy brown.
