This is a lot sweeter than rotel with the sugar and I even used a little less than it called for. I would say maybe half is probably better, but this was my first time making it. still is tasty but not for the intended use.

1 question you don't mention seeding the tomatoes? Do you leave the seeds in? I tend to like my peels on too so I will be leaving them on.

I use a very similar recipe for canning. It is one recipe we use ALL the time! I can it in 4 oz and 8 oz jars. I use it for making Spanish Rice and also when cooking ground beef for Mexican meals. I didn't can enough last year and recently ran out. I know to make even more this season!

Wish I could give this more stars. The only thing I changed was added some yellow bannana peppers and some red bell peppers from the garden along with the green peppers. This stuff is good!!!! I made it mild. Next week will make the rotel dip with cheese for football. Thanks for posting.

I used this recipe last year and it was such a hit I made it again this year. I use it in chili it makes it a lil tangier, which my family loves.

This was wonderful and helped me use up the huge supply of Romas in the garden. I chopped the tomatoes, unpeeled but seeded, roughly in the food processor as well as the onions and peppers. This made 4 perfect pints.

I requested a recipe last year and this one is the one I used. It is SOOOO good! I had 5 pints. Will be using this recipe from now on, no more store bought Rotel for me. Thanks for posting this one!!!
