A wonderful recipe. I prepared it biweekly all summer and am about to make a big batch for Christmas. I find that I can double the peaches and increase the ther ingredients by 1/2 and get the same fine result.

What a lovely way to perk up a can of peaches! I used raw, unfiltered apple cider vinegar (Bragg's) and subbed 1 allspice berry for the pinch of ground. Since the peaches weren't submerged in the liquid, I moved them around frequently while simmering. They ended up subtly spiced and delicious. Thanks for sharing your recipe, Greg!
