FANTASTIC! I was looking for a simple pineapple dish to take to a church Christmas dinner where ham was served and found this recipe. I decided to try it; this bake was a hit.
The ingredient list and instructions are simple and it came out great. I used crusty Italian bread that I toasted in the oven for just a couple of minutes while the oven was heating. I also added a teaspoon of cinnamon to add a bit of depth of flavor.
This could easily be used as a dessert by adding cinnamon (see above) and 1/2 cup of dried cranberries or cherries.
Definitely have to serve it warm. DELICIOUS!

When I spotted this recipe I quickly added it to my "must try" list. I wasn't sure what to expect with it being called a stuffing. I made it to serve with a baked ham. I thought it could easily be a dessert while hubby thought it was good with the ham. It does taste great either way. Next time I would use toasted bread cubes instead of plain bread. I think it might add to the texture. I also want to experiment & try adding some savory elements to it. Thank you for sharing your recipe! Made for the Cookathon in John's memory. 2008
