This totally did not work for me. I'm no newcomer to caramelizing sugar, but neither do I keep in my head optimal candy making temperatures. But I was in a hurry ... My caramel-honey mixture started to burn way before the 20 minutes were up. I just pulled it off the stove and poured in onto the waxed paper and smeared it thin to cool it quickly. I left out the almonds because it wasn't coming together as I had hoped. I am thinking that the brittle may still be used, maybe broken up over filled sweet crepes to achieve that burnt sugar flavor of a creme brulee. I'm going to look for a recipe with straight sugar and one that lists target temperatures for when I have more time.

- In a heavy skillet, heat the sugar over low heat until it has melted and is slightly browned, making sure it doesn't burn.
- Add the honey and butter; simmer for 20 minutes. Stir in the nuts and cook for 10 minutes.
- Line a platter or pan with wax paper and drop tablespoonfuls of the brittle onto the paper.
- Let it harden, break into pieces and serve.
