      Easy and delicious. Great for a weekend dinner. While it's baking in the oven, there is plenty of time to relax with family.

      I made the Hobo Adobo Foil Dinner for my family last week and everyone loved it! It's been a while since I made something neither of my kids complained about.

      My favorite part was the potatoes. I loved the lemon flavor, and the addition of the red peppers. I cut the potatoes pretty small and my meals were cooked in just under 1 hour.

      Next time I will use half as much oil in the potatoes, as there was quite a bit left in the package, along with the grease from the meat patties. I also think this would be good with pepper jack cheese instead of monterey jack.

      Made this last night for my family, it was really good. It has a lot of flavor. I did do a couple things different because of what I had on hand. I used green peppers instead of red peppers, skipped the green onions, didn't have cumin so I subbed chili powder. The only thing my husband thought is that it would be good with more veggies and less potatoes, so next time I will do 2 potatoes and add carrots, celery and corn.
