This recipe came from my aunt, who was a wonderful cook. We eat it both with and without the spinach or ham.

Directions

  1. In a large heavy skillet, fry onion and hash browns in oil until lightly browned.
  2. Stir.
  3. Add spinach.
  4. Cover and cook until wilted.
  5. While the spinach is cooking down, stir eggs and milk in a bowl.
  6. Pour eggs on top of spinach.
  7. Salt& pepper to taste.
  8. Cover.
  9. Cook over low heat until eggs are set.
  10. Remove from heat.
  11. Add cheese.
  12. Cover and let set until cheese is melted.
  13. Cut into wedges and serve.
