- 59.14 ml unsalted butter, softened
- 118.29 ml brown sugar, firmly packed
- 59.14 ml molasses
- 2 eggs
- 236.59 ml milk
- 236.59 ml whole wheat flour
- 59.14 ml Fiber One cereal (or any high fibre cereal)
- 354.88 ml wheat bran
- 22.18 ml ground flax seed
- 2.46 ml cinnamon
- 0.61 ml clove
- 1.23 ml salt
- 7.39 ml baking powder
- 2.46 ml baking soda
- 118.29 ml blueberries (fresh or frozen)
- 59.14 ml pecans, chopped
- 118.29 ml raisins
directions
- Cream butter and brown sugar.
- Add molasses and eggs and beat well.
- Add milk, bran, flaxseed and cereal.
- Combine flour, baking powder, soda, salt, cinnamon and cloves.
- Add to liquid ingredients.
- Add fruit and nuts.
- Spoon into prepared muffin tins 2/3 full.
- Bake at 400 degrees for 18 minutes.
- Makes 16 average sized muffins.
