Submitted to the fatfree.com website by Irene Schmidt. Her comments: "This bread has nice nutty flavor, thanks to the flax seeds. It is good enough to be eaten plain, but sometimes I make a banana sandwich: slice a banana lengthwise, place on a slice of bread, sprinkle some cinnamon and place another slice of bread on top. Delicious bread! Moist and dense. Made a few adjustments: used olive oil instead of the applesauce as I was out. Added 1 heaping tbsp. of cocoa for color, substituted 2 tblp. of molasses for the 1 tbsp. of honey. I will probably add a couple of extra tbsp. of water next time as the dough was thick and the top of the crust was misshapened! But a nice hearty healthy bread!
