ingredients

• 1 -24 ounce pickled marinated herring in wine sauce, drained
• 2 tablespoons water
• 3 tablespoons tomato puree
• 2 -3 tablespoons granulated sugar
• 2 tablespoons wine vinegar
• 1 small onion, finely chopped

directions

1. Place herring in a bowl dissolve sugar in the water and mix with the vinegar, tomato puree and onion. Pour this tomato dressing over the herring and garnish with mustard and cress.
