This was great. I used fresh Oregano and Basil and it was a lovely combination. I think the problem Kumquat had with the apples being too firm might be due to using eating apples rather than cookers. I used Bramley apples, and the texture and flavour were fantastic.

This recipe has great potential and with a bit of tweaking deserves 5 stars. I boiled the apples with the potatoes for about 3-4 minutes but they were not yet soft or mashable. The potatoes mashed fine though. I used 3 granny smith apples and 1 large potato but I would change that to 2 apples and 2 potatoes. Be sure to cut the apples into thin, small pieces to be incorporated with the mashed potatoes (had I sliced them thinner they may have softened better, but recipe did not specify). I used butter, oregano, basil, garlic, lime juice, salt and pepper to flavor and I mixed in about 1/3 cup low fat cheddar (grated) because I thought it would go well with the apple and herbs, which it did very well:D Thanks for the recipe, I will try this again!
