Herbed Pasta With Shiitake Mushrooms

A light pasta dish that is quick and very easy. If you are a vegetarian, the mushrooms are a great substitution for meat in a pasta dish.

  1. Soak dried shiitake mushrooms in warm water for 20-30 minute to rehydrate. Squeeze out any excess water.
  2. Cook pasta according to package directions and set aside.
  3. In large pan heat olive oil over medium-high heat. Add onion, mushrooms and garlic.
  4. Reduce heat to medium and add butter, red pepper, Italian Seasoning, garlic, and basil. Cook about 1-2 minute to mix flavors.
  5. Add wine. Cook another 2-3 minutes to allow flavors to blend.
  6. Add milk and let simmer until liquid is almost evaporated.
  7. Mix pasta into "sauce" and add a bit more milk or butter if needed to evenly coat.
  8. Sprinkle with Parmigiano-Reggiano and serve.

Was really good and pretty quick! I actually didn't have any milk, but it was still very tasty anyway. My bf, that hates mushrooms and onions, loved the flavor of the sauce. I will be making this again and again. So easy!

Huge success, even though I completely forgot the basil. I made this for a dinner party with super fresh shiitakes, and everybody absolutely loved it! I also didn't have any red pepper, so I substituted a bit of dry chili flakes.

My wife absolutely loved this recipe. I substituted penne for spaghetti, smart balance for butter and silk plain soy milk for the milk to make it an amazing vegan dish. I also used fresh shiitake mushrooms instead of dehydrated ones. It was very creamy and delicious. The Trader Joe's by me has fresh shiitake mushrooms for cheap so this dish was a winner! Thanks.
