Wanted a quick dinner and checked through the garden, sure enough a little of this and a little of that....voila!
- 1 lb mahi mahi
- 8 fresh basil leaves, rolled and sliced thin
- 2 tablespoons fresh garlic chives, minced (or regular)
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons salsa, mild (your choice mild or hot)
- 1 tablespoon capers, drained
- 1 tablespoon olive oil
- Combine all ingredients.
- Spread on fish and bake at 350 until done.
