So good! Loved the herb blend and feta - it really made these pop! I had reduced this to one serving, so when I stuck it back in the oven for the second bake, I ended up taking it out after about 10 minutes. Thanks for sharing! ZWT9
Wonderful! I love any kind of roasted potatoes, and these did not disappoint. I could not taste the mint at all, so I might increase that slightly next time. Loved the feta with it! Thanks for posting.
these were so tasty!!! made exactly as written but had to use dried mint instead of fresh and used chicken broth instead of water. so flavorful and easy! love the added tang of the feta at the end! thanks for another winner, annacia! made for 1-2-3 tag!
These are very good. I used dried basil instead of fresh mint, because it was raining and I didn't want to go out and yank the mint out of my garden. I'll try it with the mint the next time--these are excellent potatoes, a great side for just about anything! Thanks for posting.

Amazing! I love this method of roasting potatoes - I never would have thought adding water to the oil would make such a difference. I tried several when I pulled the pan out to add the herbs, and have to say I preferred them without the herbs and cheese, and will probably make them that way in the future. For ZWT9
Loved the smells filling my kitchen while this was cooking! I halved the recipe and cut the cooking down to 25 minutes before adding the oregano, added a bit of water and cooked for about 20 more minutes. Added the feta at the end, and after tasting added just a bit more sea salt. I was stingy with it at first, afraid the feta would make it too salty. This was delicious! Thanks for sharing.
