Herbed Brown Rice

ingredients
- 1 tablespoon olive oil
- 1 cup onion, chopped
- 1 (12 ounce) package long grain brown rice
- 2 garlic cloves, minced
- 3 cups chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1 teaspoon dried chives
- 3⁄4 teaspoon black pepper
- 1⁄2 teaspoon salt
directions
- Preheat oven to 350 degrees. Heat oil in a 3-quart, ovenproof, saucepan over medium heat. Add onion & saute, stirring frequently, for 5 minutes. Add the rice; cook, stirring for 2 minutes. Stir in remaining ingredients.
- Cover & transfer to the oven. Bake 40 minutes or until rice is tender.

Outstanding. I use brown rice a lot and this came out with a perfect texture and flavor. I skipped the oil and sautéing of the onion and rice to save that bit of fat and just cooked it all in the liquid (chicken stock). The rice was well cooked with that classic soft/chewy consistency. The herb mix was just delicious. You have a great recipe here and it's one that I will be making again without doubt. Thanks NELady for a yummy and healthy rice.
