I had a yen for a fried egg sandwich, but I kept finding things to add to it.

  1. Lightly beat the eggs and fry them, seasoning to taste with salt, pepper, and dill. Remove to a plate.
  2. Spread margarine on one side of each slice of bread. Spread the other side of one slice with Miracle Whip. Place that slice in a hot skillet.
  3. Top bread slice with fried eggs, turkey, swiss, and second slice of bread - butter side up. Brown sandwich on both sides.

This got 2 thumbs up from my two teenage sons, who just loved this. I was able to prepare 2 sandwiches very quickly by preheating the frying pan, then microwaving the eggs for 1 minute each, then assembling and grilling the sandwich. Thanks for such a good tasting and easy to prepare breakfast! Posted for 2013 Spring Pick-A-Chef.
