I had a yen for a fried egg sandwich, but I kept finding things to add to it.
- 2 eggs
- 1 slice turkey
- 1 slice baby swiss cheese
- 2 slices bread
- 1 teaspoon Miracle Whip
- 1⁄2 teaspoon dried dill
- 2 teaspoons margarine
- salt and pepper
- Lightly beat the eggs and fry them, seasoning to taste with salt, pepper, and dill. Remove to a plate.
- Spread margarine on one side of each slice of bread. Spread the other side of one slice with Miracle Whip. Place that slice in a hot skillet.
- Top bread slice with fried eggs, turkey, swiss, and second slice of bread - butter side up. Brown sandwich on both sides.
Good and easy. I used butter, mayonnaise, and an English muffin.
This got 2 thumbs up from my two teenage sons, who just loved this. I was able to prepare 2 sandwiches very quickly by preheating the frying pan, then microwaving the eggs for 1 minute each, then assembling and grilling the sandwich.
